Steak Preparation

    Season and Cook the Steak

    Season the ribeye or NY strip steak with salt and black pepper. Heat olive oil in a grill pan or outdoor grill over medium-high heat. Cook the steak for 4-5 minutes on each side or until it reaches your desired level of doneness. Remove from heat and let it rest for 5 minutes.

Enchilada Preparation

    Prepare the Enchiladas

    In a skillet, heat olive oil over medium heat and sauté the diced onion until translucent. Add the red chile sauce and bring to a simmer. Soften the blue corn tortillas by lightly frying them in a separate pan. Fill each tortilla with a spoonful of the onion mixture and shredded cheese. Roll the tortillas and place them seam side down in a baking dish. Pour remaining red chile sauce over the top and sprinkle with additional cheese. Bake at 350°F for 15-20 minutes until heated through and cheese is melted.

    Prepare the Pinto Beans

    In a saucepan, combine the cooked pinto beans, minced garlic, cumin, and salt. Heat over medium heat until warmed through and flavors meld, about 5 minutes.
