    Prep the Vegetables

    Peel and dice the Russet potatoes into small cubes. Chop the onion, carrot, and celery into small pieces. Mince the garlic cloves.

Cooking the Soup

    Sauté the Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.

    Add Garlic and Potatoes

    Stir in the minced garlic and cook for another minute. Add the diced potatoes, vegetable broth, salt, and black pepper. Bring to a boil.

    Simmer the Soup

    Once boiling, reduce the heat to low and let it simmer for about 20 minutes or until the potatoes are tender.

Finishing Touches

    Blend the Soup

    Using an immersion blender or a regular blender, puree the soup until smooth. If using a regular blender, be sure to let it cool slightly before blending to avoid splatters.
