Method

Base Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, and baking powder until well combined.

  3. 3

    Cream Butter and Sugar

In another bowl, beat the unsalted butter until creamy. Gradually add the granulated sugar, mixing until light and fluffy.

  4. 4

    Add Eggs and Vanilla

Add the eggs one at a time to the butter mixture, beating well after each addition. Stir in the vanilla extract.

  5. 5

    Combine Mixtures

Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

  6. 6

    Bake the Base

Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  7. 7

    Cool the Base

Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Topping Preparation

  1. 8

    Prepare the Berries

While the cake is cooling, rinse the fresh berries under cold water and gently pat them dry with a paper towel.

  2. 9

    Mix Topping Ingredients

In a bowl, combine the fresh berries, honey, and lemon juice. Toss gently to coat the berries evenly.

  3. 10

    Garnish with Mint

Finely chop the mint leaves and sprinkle them over the berry mixture for added freshness.

Assembly

  1. 11

    Serve the Cake

Once the cake has completely cooled, place it on a serving platter. Top it generously with the berry mixture and serve immediately.
