Method

For the Potato Cakes

  1. 1

    Prepare the Potatoes

Peel and chop the potatoes into even-sized pieces. Boil them in salted water until tender, about 15-20 minutes.

  2. 2

    Mash the Potatoes

Drain the potatoes and return them to the pot. Mash until smooth and let them cool for a few minutes.

  3. 3

    Combine Ingredients

In a mixing bowl, combine the mashed potatoes, flour, chopped green onions, egg, salt, and black pepper. Mix until well combined.

  4. 4

    Shape the Cakes

Form the mixture into small patties, about 1/2 inch thick.

  5. 5

    Cook the Cakes

In a large skillet, melt 2 tablespoons of butter over medium heat. Fry the potato cakes for about 4-5 minutes on each side until golden brown. Repeat with remaining butter and cakes.

For the Dipping Sauce

  1. 6

    Prepare the Dipping Sauce

In a small bowl, combine sour cream, chopped chives, lemon juice, garlic powder, and salt to taste. Mix well.

  2. 7

    Serve

Serve the potato cakes hot with the chive dipping sauce on the side.
