    Prepare the Ingredients

    Chop the onion, slice the carrots, mince the garlic, and dice the potatoes. Cut the beef into 1-inch cubes and season lightly with salt and black pepper.

    Sear the Beef

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes in batches, searing them on all sides until browned. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, sliced carrots, and minced garlic. Sauté for about 5 minutes until the vegetables are softened.

    Combine Ingredients

    Return the browned beef to the pot. Add the diced potatoes, Guinness stout, beef broth, tomato paste, dried thyme, and bay leaves. Stir to combine all ingredients well.

    Simmer the Stew

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 2 to 3 hours, or until the beef is tender and the sauce has thickened.

    Final Seasoning

    Taste and adjust seasoning with additional salt and black pepper if needed. Remove bay leaves before serving.
