Prepare the lamb
In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Season the cubed lamb shoulder with salt and pepper. Brown the lamb in batches, making sure not to overcrowd the pot. Remove the browned lamb and set it aside.

Add seasonings
Add the dried thyme, bay leaves, additional salt, and black pepper to the mixture. Stir well.

Simmer the stew
Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, stirring occasionally, until the lamb is tender and the vegetables are cooked through.

Serve the stew
Remove the bay leaves before serving. Serve hot, and enjoy with crusty bread or over mashed potatoes.
