    Prepare the Beef

    Cut the chuck beef into 1-inch cubes, trimming any excess fat.

    Chop the Vegetables

    Peel and chop the carrots and potatoes into bite-sized pieces. Dice the onion and mince the garlic.

Cooking

    Brown the Beef

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the cubed beef and brown on all sides, about 5-7 minutes.

    Sauté the Vegetables

    Add the diced onion and minced garlic to the pot. Cook until the onion is translucent, about 3-4 minutes.

    Combine Ingredients

    Stir in the carrots and potatoes, followed by the Guinness beer, beef broth, bay leaves, salt, black pepper, thyme, and paprika. Bring to a simmer.

    Slow Cook the Stew

    Reduce heat to low, cover the pot, and let simmer for 2-3 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally.
