For the Battered Fish

Prepare the Batter
In a mixing bowl, combine the flour, cornstarch, baking powder, and salt. Gradually whisk in the beer or sparkling water until a smooth batter forms. Let it sit for about 15 minutes.

Heat the Oil
In a deep pot or fryer, heat the oil to 350°F (175°C). Make sure the oil is hot enough before frying the fish.

Batter and Fry the Fish
Dip each fish fillet into the batter, ensuring it is fully coated. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes or until golden brown. Remove and drain on paper towels.

Prepare the Potatoes
Peel the russet potatoes and cut them into thick fries. Rinse the cut fries under cold water to remove excess starch.

Heat the Oil
In a separate deep pot or fryer, heat the oil to 350°F (175°C).

Fry the Potatoes
Fry the potatoes in batches for about 5-7 minutes until they are golden and crispy. Remove and drain on paper towels. Season with salt to taste.

In a small bowl, combine mayonnaise, chopped pickles, chopped capers, lemon juice, and dill. Stir well until all ingredients are incorporated.

Cover the tartar sauce and refrigerate for at least 30 minutes to allow the flavors to meld.
