Prepare the Pork Belly
Cut the pork belly into bite-sized cubes and season with salt and pepper.

Make the Glaze
In a bowl, combine brown sugar, soy sauce, rice vinegar, minced garlic, grated ginger, Sriracha, and sesame oil. Mix well.

Slow Cook the Pork
Place the pork belly cubes in a slow cooker and pour the glaze over them. Toss to coat.

Cook
Cover and cook on low for 6-8 hours or until the pork is tender and the flavors meld.

Finish and Serve
Once cooked, remove the pork belly from the slow cooker and let it cool slightly. Serve garnished with chopped green onions and sesame seeds.
