Melt the Chocolate

In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.

Whip the Cream

In a separate bowl, whip the heavy cream until soft peaks form. Reserve about 100ml for topping.

Prepare the Egg Mixture

In another bowl, whisk the eggs with sugar, vanilla extract, and a pinch of salt until pale and fluffy.

Combine Ingredients

Fold the melted chocolate into the egg mixture gently. Then, fold in the whipped cream until fully combined, being careful not to deflate the mixture.

Chill the Mousse

Pour the mousse into serving cups or bowls and refrigerate for at least 2 hours or until set.

Serve

Before serving, top each mousse with a dollop of reserved whipped cream and sprinkle with chocolate shavings.
