Prepare the Pulled Pork
In a slow cooker, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened. Season pork shoulder with salt and pepper, then place in the slow cooker. Cover with coffee BBQ sauce. Cook on low for 8 hours or until the pork is tender and easily shredded.

Make the Vinegar Coleslaw
In a large bowl, combine shredded cabbage, carrots, and a vinegar-based dressing. Toss well and let sit for at least 30 minutes to allow the flavors to meld.

Prepare Pickled Shallots
In a small saucepan, combine sliced shallots with vinegar, sugar, and a pinch of salt. Heat gently until the sugar dissolves. Let cool and store in the refrigerator until ready to use.

Assemble the Sandwich
Once the pork is ready, shred it with two forks. Place a generous amount of pulled pork on a potato roll, top with vinegar coleslaw and pickled shallots. Serve with tater tots or a simple salad on the side.
