    Prepare the Potatoes

    Peel and dice the Yukon Gold potatoes into small cubes. Rinse under cold water and pat dry.

    Fry the Potatoes

    In a large skillet, heat olive oil over medium-high heat. Add the potatoes and season with salt, paprika, and garlic powder. Fry until golden brown and crispy, about 15-20 minutes. Remove and place on paper towels to drain excess oil.

Bravas Sauce

    Make the Bravas Sauce

    In a saucepan over medium heat, combine tomato sauce, smoked paprika, red pepper flakes, olive oil, vinegar, and salt. Stir and let simmer for about 10 minutes until slightly thickened.

Poach Eggs

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide into the water. Poach for about 3-4 minutes until the whites are set. Remove with a slotted spoon.

Assemble

    On a plate, place a generous serving of fried potatoes. Top with bravas sauce, fresh spinach, diced tomato, poached eggs, and a drizzle of hollandaise sauce. Add bacon and avocado if desired.
