Prepare the Potatoes

Preheat the oven to 425°F (220°C). Wash and cut the Yukon Gold potatoes into cubes. In a large bowl, mix the potatoes with olive oil, paprika, garlic powder, salt, and black pepper. Spread the potatoes on a baking sheet and roast for 25-30 minutes until golden and crispy.

Cook the Pulled Pork

In a slow cooker, combine the pork shoulder, coffee BBQ sauce, onion powder, cumin, salt, and black pepper. Cook on low for 8 hours or until the pork is tender and easily shredded. Once cooked, shred the pork with two forks and mix it with the sauce.

Cook the Eggs

Cook the eggs to your liking (sunny-side up, scrambled, or poached) in a skillet. Season with salt and pepper.

Assemble the Bowl

In a large bowl, layer the roasted potatoes, topped with the pulled pork, followed by the cooked eggs. Sprinkle with cheddar cheese and garnish with chopped green onions. If desired, add sliced avocado on top for an extra charge.
