Marinate the Chicken
In a large bowl, combine buttermilk and chicken thighs. Cover and refrigerate for at least 2 hours, or overnight for best results.

Prepare the Coating
In another bowl, mix together flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

Coat the Chicken
Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring they are well-coated.

Fry the Chicken
Carefully place the coated chicken thighs in the hot oil. Fry in batches for about 5-7 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
To assemble, cut potato rolls in half. Spread burger sauce on both sides, then layer with fried chicken, bibb lettuce, tomato slices, and onion slices. Top with the other half of the roll.
