Method

Zucchini Chips Preparation

  1. 1

    Slice the Zucchini

Wash the zucchini thoroughly and slice them into thin rounds, about 1/4 inch thick. Set aside.

  2. 2

    Prepare the Breading Stations

In three separate shallow bowls, set up your breading stations: Place the all-purpose flour in the first bowl, beat the eggs in the second bowl, and mix the bread crumbs, salt, pepper, and garlic powder in the third bowl.

  3. 3

    Bread the Zucchini Slices

Take each zucchini slice, dip it in the flour, ensuring it's fully coated, then shake off the excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat it in the breadcrumb mixture, pressing gently to adhere the crumbs.

  4. 4

    Heat the Oil

In a large, deep skillet or pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread into it; if it sizzles immediately, the oil is ready.

  5. 5

    Fry the Zucchini Chips

Carefully add the breaded zucchini slices to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown. Use a slotted spoon to remove the chips and place them on a paper towel-lined plate to drain excess oil.

Buttermilk Dressing Preparation

  1. 6

    Combine Dressing Ingredients

In a medium bowl, whisk together the buttermilk, mayonnaise, garlic powder, and dried dill until smooth and well combined.

  2. 7

    Season the Dressing

Add salt and black pepper to taste, adjusting as necessary. Mix well and refrigerate until ready to serve.
