Preparation
Prepare the Chicken
Cut the boneless, skinless chicken breasts into strips approximately 1 inch wide. Season with salt and black pepper.
Breading Setup
Set Up Breading Station
In three separate bowls, set up your breading station. In the first bowl, add the all-purpose flour. In the second bowl, beat the eggs. In the third bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, and paprika, mixing well.
Bread the Chicken
Coat the Chicken Strips
Take each chicken strip and first coat it in the flour, shaking off any excess. Then dip it into the beaten eggs, allowing any excess egg to drip off. Finally, coat the chicken in the breadcrumb mixture, pressing gently to ensure it adheres well. Repeat this process for all chicken strips.
Cooking
Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it's hot but not smoking.
Fry the Chicken Fingers
Carefully add the breaded chicken strips to the hot oil, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).
Drain and Serve
Once cooked, remove the chicken fingers from the skillet and place them on a plate lined with paper towels to absorb any excess oil. Serve warm with your favorite dipping sauce.
