Preparing the Frites

Cutting the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to resemble fries.

Drying the Potatoes
After soaking, drain the water and thoroughly dry the potatoes using a clean kitchen towel or paper towels.

Heating the Oil
In a large pot or deep fryer, heat the vegetable oil to 325°F (160°C).

Frying the Potatoes
Fry the potatoes in batches for about 5-6 minutes until they are tender but not browned. Remove and drain on paper towels.

Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for an additional 3-4 minutes until golden brown and crispy. Drain on paper towels and season with salt to taste.

Generously season both sides of the ribeye steaks with salt and black pepper.

In a large skillet, heat the olive oil over medium-high heat until it shimmers.

Searing the Steak
Add the seasoned steaks to the hot skillet. Sear each side for about 4-5 minutes for medium-rare, or until desired doneness is achieved.

In the last minute of cooking, add the butter, garlic cloves (smashed), and fresh thyme to the pan. Baste the steaks with the melted butter using a spoon.
