Spicy Buffalo Cauliflower Recipe
Buttermilk-battered cauliflower florets fried to a golden brown, then tossed in our house-made sriracha buffalo sauce and topped with a salad of celery, cilantro, scallions, and gruyere cheese.

Cauliflower Preparation

Prepare the Cauliflower
Begin by cutting the cauliflower head into bite-sized florets. Rinse them under cold water and set aside.

Make the Batter
In a large mixing bowl, combine buttermilk, all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Whisk until smooth.

Coat the Cauliflower
Dip each cauliflower floret into the batter, ensuring it is fully coated. Allow excess batter to drip off before placing it in the hot oil.

Fry the Cauliflower
Fry the battered cauliflower florets in batches for about 4-5 minutes, or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Buffalo Sauce

Prepare the Buffalo Sauce
In a small saucepan over medium heat, melt the butter. Once melted, add the sriracha sauce and stir until well combined. Remove from heat.

Toss Cauliflower in Sauce
In a large mixing bowl, add the fried cauliflower florets and pour the buffalo sauce over them. Toss gently to ensure all florets are coated with the sauce.

Grate or finely chop the gruyere cheese and add it to the salad mixture. Toss to combine.
