    Prepare the Filling

    In a large mixing bowl, combine ground chicken, finely minced lemongrass, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

    Chop Green Onions

    Chop the green onions and set aside a small amount for garnishing the potstickers later.

    Assemble Potstickers

    Place a wonton wrapper on a clean surface. Spoon about 1 tablespoon of the chicken filling onto the center of the wrapper. Moisten the edges with water, fold the wrapper over to create a half-moon shape, and pinch the edges to seal. Repeat until all filling is used.

Cooking the Potstickers

    Steam the Potstickers

    Prepare a steamer pot with water and bring it to a boil. Place the potstickers in the steamer basket, ensuring they are not touching. Cover and steam for about 8-10 minutes, or until the chicken is cooked through.

    Make the Sauce

    In a small saucepan, combine soy sauce, mirin, sake, brown sugar, sesame oil, cornstarch, and water. Heat over medium heat while stirring until the mixture thickens and becomes glossy.

Serving

    Serve the Potstickers

    Arrange the steamed potstickers on a serving plate. Drizzle with the Japanese BBQ sauce and sprinkle with the reserved chopped green onions. Serve warm.
