Fried Chicken Preparation

    Prepare the Chicken

    In a large bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, and garlic powder.

    Marinate the Chicken

    In another bowl, combine the buttermilk and eggs. Add the chicken breasts and let marinate for at least 30 minutes.

    Coat the Chicken

    Remove chicken from buttermilk mixture, allowing excess to drip off. Dredge each piece in the flour mixture, pressing to adhere. Shake off any excess flour.

    Fry the Chicken

    In a large skillet, heat the vegetable oil over medium-high heat. Fry the chicken breasts for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and place on paper towels to drain.

Cabbage Slaw Preparation

    Make the Slaw

    In a large bowl, combine the shredded cabbage and carrots.

    Mix the Dressing

    In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

    Pour the dressing over the cabbage mixture and toss until well coated. Refrigerate until ready to serve.

Hawaiian Salsa Preparation

    Prepare the Salsa

    In a medium bowl, combine the diced pineapple, red bell pepper, red onion, cilantro, lime juice, and salt. Mix well and let sit for 10 minutes to allow flavors to meld.

Sandwich Assembly

    Assemble the Sandwich

    On each potato bun, place a fried chicken breast, top with a generous scoop of cabbage slaw, and finish with a spoonful of Hawaiian salsa.
