Method

Prepare the Shrimp

    Marinate the Shrimp

    In a medium bowl, combine olive oil, minced garlic, paprika, salt, black pepper, and lemon juice. Add the shrimp and toss to coat evenly. Cover and let marinate in the refrigerator for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F to 400°F).

    Skewer the Shrimp

    If using wooden skewers, soak them in water for 30 minutes before use. Thread the marinated shrimp onto the skewers, about 5-6 shrimp per skewer.

Prepare the Sides

    Grill the Asparagus

    Toss the trimmed asparagus with olive oil, salt, and pepper. Grill for about 5-7 minutes, turning occasionally until tender and slightly charred.

    Boil the Potatoes

    Place the halved baby potatoes in a pot of salted water and bring to a boil. Cook for 15-20 minutes until tender. Drain and toss with olive oil, salt, and pepper.

    Prepare the Salad

    In a large bowl, combine mixed salad greens with your choice of dressing.

    Cook the Quinoa

    Rinse 1 cup of quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water, bring to a boil, then lower heat, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork.

    Grill the Corn

    Place corn on the grill and cook for 10-15 minutes, turning occasionally until charred. Cut the kernels off the cob if desired.

    Grill the Shrimp

    Place the skewers of shrimp on the preheated grill. Grill for 2-3 minutes on each side, or until the shrimp are pink and opaque.
