Marinating Chicken

    Prepare the Marinade

    In a medium bowl, combine olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper. Mix well to create a marinade.

    Marinate the Chicken

    Place the chicken breasts in a large resealable plastic bag or glass dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for best flavor.

Grilling the Chicken

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F to 450°F).

    Grill the Chicken

    Remove the chicken from the marinade and discard the marinade. Place the chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is no longer pink in the center.

Preparing Seasonal Vegetables

    Prepare the Vegetables

    In a large bowl, toss the sliced zucchini, sliced bell peppers, and trimmed asparagus with olive oil, salt, and black pepper until evenly coated.

    Once the chicken is nearly done, place the vegetables on the grill. Grill for 5-6 minutes, turning occasionally, until they are tender and slightly charred.

Serving
