Prepare the Coconut Shrimp

Coat the Shrimp
In a shallow dish, mix the flour, salt, and black pepper. In another dish, beat the eggs. In a third dish, place the coconut flakes. Dip each shrimp first in the flour mixture, then in the egg, and finally coat it in the coconut flakes.

Fry the Shrimp
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the coated shrimp in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.

Cook the Fries
While the shrimp are frying, cook the frozen French fries according to package instructions until they are crispy. Once done, sprinkle with salt to taste.
Make the Hawaiian Dipping Sauce

Mix the Sauce
In a small bowl, combine mayonnaise, pineapple juice, sweet chili sauce, and lime juice. Stir until well mixed and smooth.
Serve the Dish

On a serving plate, arrange the fried coconut shrimp alongside the crispy fries. Serve with the Hawaiian dipping sauce on the side.
