Method

Cake Preparation

  1. 1

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

  2. 2

    Mix Eggs and Sugar

In a separate mixing bowl, whisk together the large eggs and granulated sugar until the mixture becomes pale and fluffy.

  3. 3

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture while continuously whisking to combine. Add in vanilla extract and a pinch of salt.

  4. 4

    Incorporate Flour

Sift the all-purpose flour over the chocolate mixture and gently fold it in using a spatula until just combined. Do not overmix.

  5. 5

    Prepare Ramekins

Preheat your oven to 200°C (400°F). Grease four ramekins with butter and dust with flour to prevent sticking.

  6. 6

    Fill Ramekins

Evenly distribute the batter into the prepared ramekins, filling them about 3/4 full.

  7. 7

    Bake the Cakes

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center will remain soft.

  8. 8

    Let Cool

Once baked, remove the ramekins from the oven and let them cool for 1-2 minutes.

  9. 9

    Serve

Carefully invert each ramekin onto a plate and gently lift to release the cake. Dust with powdered sugar and serve warm with scoops of vanilla ice cream.
