Prepare the Fries
Preheat your oven as per the instructions on the frozen French fries package. Spread the frozen fries evenly on a baking sheet and sprinkle with salt. Bake according to package instructions until crispy and golden brown.

Cook the Chili
In a large skillet over medium heat, add the vegetable oil. Once hot, add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and ground beef, cooking until the beef is browned. Drain excess fat if necessary. Stir in chili powder, cumin, salt, and black pepper. Add canned diced tomatoes and kidney beans, bringing the mixture to a simmer. Let it cook for about 15 minutes, stirring occasionally.

Assemble the Chili Cheese Fries
Once the fries are done baking, remove them from the oven and layer them on a serving plate. Spoon the hot chili evenly over the fries. Top with shredded cheddar and Monterey Jack cheese. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly. Serve immediately.
