Chicken Marinade

Marinate the Chicken
In a bowl, combine garlic powder, paprika, salt, black pepper, lemon juice, and olive oil. Add the boneless chicken breasts and coat well. Cover and marinate in the refrigerator for at least 30 minutes.

Heat oil in a frying pan over medium heat. Once hot, carefully place the breaded chicken in the oil. Fry for about 6-7 minutes on each side or until golden brown and cooked through. Drain on paper towels.
Kale Slaw

Prepare the Kale Slaw
In a large bowl, combine chopped kale, grated carrot, mayonnaise, apple cider vinegar, salt, and black pepper. Toss well to combine and let it sit for at least 10 minutes to soften the kale.

Assemble the Sandwich
Spread a generous amount of peri-peri sauce on the bottom half of each potato bun. Place a piece of fried chicken on top, followed by a layer of kale slaw and a few bread-and-butter pickles. Top with the other half of the bun and serve.
