Chicken Parmesan Sandwich Recipe

Chicken Preparation

Season the Chicken
Season the chicken breasts with salt and black pepper on both sides.

Bread the Chicken
Dip each chicken breast first in flour, then in the beaten eggs, and finally in the breadcrumbs, ensuring an even coating.

Fry the Chicken
In a large skillet, heat olive oil over medium heat. Once hot, carefully add the breaded chicken breasts. Fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Bread
Slice the Cuban bread loaves in half lengthwise without cutting all the way through.

Assemble the Sandwich
Spread a generous amount of marinara sauce on the bottom half of each bread. Place the fried chicken breast on top.

Add Cheeses and Basil
Sprinkle mozzarella and Parmesan cheese over the chicken. Top with fresh basil leaves.

Prepare the Potatoes
Wash and peel the potatoes, then cut them into thin strips for fries.

In a large pot, heat oil over medium heat. Once hot, add the potato strips in batches and fry until golden brown, about 5-7 minutes. Remove and drain on paper towels.

Sprinkle with salt while they are still hot.
