Preparation and Cooking

    Make the Gnocchi

    Peel and boil the potatoes until tender. Drain and mash the potatoes in a bowl. Add flour, egg, and chopped herbs. Mix until a dough forms. Roll into logs and cut into small pieces, then shape them using a fork.

    Prepare the Prosciutto

    In a skillet, cook the prosciutto over medium heat until crispy. Remove and set aside.

    Roast the Vegetables

    On a baking sheet, toss asparagus and cherry tomatoes with olive oil, salt, and pepper. Roast in a preheated oven at 400°F (200°C) for about 15 minutes.

    Cook the Shrimp

    In the same skillet used for prosciutto, add a bit more olive oil if needed and sauté the shrimp until pink and cooked through, about 3-4 minutes.

    Cook the Gnocchi

    In a large pot of boiling salted water, add the gnocchi. Cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.

    Combine and Serve

    In a large bowl, combine the cooked gnocchi, shrimp, roasted vegetables, and crispy prosciutto. Add grated Parmesan and toss gently. Serve warm.
