    Prepare the Chicken

    Preheat your oven to 375°F (190°C). Rinse the whole chicken under cold water and pat it dry with paper towels. Rub the chicken with olive oil, salt, black pepper, oregano, and thyme.

    Sauté the Vegetables

    In a large skillet over medium heat, add 1 tablespoon of olive oil. Add the sliced onions and sauté until caramelized, about 10-12 minutes. Add the sliced bell peppers and minced garlic, cooking for an additional 5 minutes until softened.

    Roast the Chicken

    Place the seasoned chicken in a roasting pan. Pour the lager beer around the chicken. Spoon the caramelized onions and bell peppers over the chicken. Roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).

    Add Cheese

    In the last 10 minutes of cooking, sprinkle the shredded provolone cheese over the chicken and return to the oven until the cheese is melted and bubbly.

    Serve

    Remove the chicken from the oven and let it rest for 10 minutes before carving. Serve with the roasted vegetables.
