Prepare the Ingredients
Preheat your oven to 200°C (400°F). Clean the shiitake mushrooms with a damp cloth and remove the stems. Slice the shallots thinly.

Roast the Mushrooms
Spread the seasoned mushrooms and shallots on a baking sheet in a single layer. Roast in the preheated oven for 15-20 minutes, or until tender and slightly caramelized.

Assemble the Dish
Once the mushrooms are roasted, remove them from the oven. On a serving platter, place a bed of arugula, then top with the roasted mushrooms and shallots.

Add the Finishing Touches
Dollop the goat cheese spread over the top and drizzle with white truffle oil before serving.
