    Prepare the Croutons

    Preheat the oven to 375°F (190°C). Cut the bread into small cubes and toss them with 1 tablespoon of olive oil, garlic powder, salt, and pepper. Spread the cubes on a baking sheet and bake for about 10-12 minutes or until golden brown.

    Prepare the Dressing

    In a small bowl, whisk together the remaining olive oil, white vinegar, Dijon mustard, salt, and black pepper to taste.

    Assemble the Salad

    In a large bowl, combine the mixed greens, sliced German luncheon meats, diced assorted cheese, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.

    Add Eggs and Dressing

    Slice the hard-boiled eggs and add them on top of the salad. Drizzle the dressing over the salad and toss gently to combine.
