Wild Rice Cooking Directions

    Prepare the Rice

    Rinse wild rice under cold water. In a medium saucepan, combine wild rice, water or vegetable broth, and salt. Bring to a boil over high heat.

    Simmer the Rice

    Once boiling, reduce heat to low, cover, and let simmer for about 45-60 minutes, or until the rice is tender and has absorbed the liquid. Remove from heat and let sit covered for 10 minutes.

    Sauté the Vegetables

    While the rice is cooking, heat olive oil in a skillet over medium heat. Add chopped onion, minced garlic, and chopped celery. Sauté for about 5 minutes or until the onion is translucent.

    Add Mushrooms

    Add sliced mushrooms to the skillet and continue to sauté for another 5-7 minutes, or until the mushrooms are tender and browned.

    Combine and Serve

    Fluff the cooked wild rice with a fork and add it to the skillet with the sautéed vegetables. Stir to combine, season with freshly ground pepper and chopped parsley. Serve warm.
