Pretzel Preparation

Make the Dough
In a mixing bowl, dissolve yeast and sugar in warm water. Let it sit for about 5 minutes until frothy. In another bowl, combine flour and salt. Gradually add the yeast mixture to the flour, mixing until a dough forms. Knead the dough for about 5-7 minutes until smooth.

Let it Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the Pretzels
Preheat the oven to 425°F (220°C). Divide the dough into 8 equal pieces. Roll each piece into a long rope and twist it into a pretzel shape. Place them on a baking sheet lined with parchment paper.

Baking Soda Bath
In a large pot, boil 10 cups of water and add baking soda. Carefully place each pretzel in the boiling water for about 30 seconds, then remove and place back on the baking sheet. Sprinkle with coarse sea salt.

Bake
Bake the pretzels in the preheated oven for about 12-15 minutes, or until golden brown.

In a small bowl, combine yellow mustard, horseradish, and hot sauce. Mix well and adjust seasoning to taste.
