1. Sauté the Vegetables

In a large pot, heat olive oil over medium heat. Add diced onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

2. Add Garlic and Seasonings

Stir in the minced garlic, thyme, salt, and black pepper. Cook for an additional 2 minutes until fragrant.

3. Combine Remaining Ingredients

Add the diced potatoes, vegetable broth, diced tomatoes, and bay leaf to the pot. Stir well to combine.

4. Simmer the Soup

Bring the mixture to a boil, then reduce heat to low and cover. Let it simmer for about 20-25 minutes or until the potatoes are tender.

5. Add Spinach

Remove the bay leaf and stir in the fresh spinach. Cook for an additional 5 minutes until the spinach is wilted.

6. Serve

Taste and adjust seasoning if necessary. Serve hot in bowls.
