    Remove the outer leaves of the cabbage, then cut it into quarters and remove the core. Finely shred the cabbage using a knife or mandoline.

    Place the shredded cabbage in a large bowl. Sprinkle the kosher salt over the cabbage and mix well with your hands, massaging the cabbage to release its juices.

    Stir in the caraway seeds to the salted cabbage mixture.

    Pack the Jar

    Transfer the cabbage mixture into a clean glass jar or fermentation crock, pressing down firmly to eliminate air pockets. Leave about 1-2 inches of headspace at the top.

    Add Weight and Water

    If needed, add a weight to keep the cabbage submerged in its juices. If there's not enough liquid, add water until the cabbage is fully submerged.

    Cover the jar with a cloth or a lid (not airtight) and let it ferment at room temperature for 1-4 weeks, tasting periodically until it reaches the desired tanginess.
