Simmer the Soup
Reduce heat to low and cover. Let simmer for about 3 hours, or until the oxtails are tender and the meat is falling off the bone.

Final Adjustments
Remove the oxtails, and let them cool slightly. Shred the meat from the bones and discard the bones. Return the meat to the pot. Taste and adjust seasoning with salt and pepper.
