Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and 1/4 cup of the granulated sugar until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and allow to cool.

Make the Filling
In a large bowl, beat the softened cream cheese with an electric mixer until creamy. Gradually add the remaining 3/4 cup of granulated sugar, and continue to beat until smooth. Add the sour cream, vanilla extract, and eggs one at a time, mixing well after each addition. Finally, add the flour and mix until just combined.

Bake the Cheesecake
Pour the cream cheese filling over the cooled crust. Bake in the preheated oven for 55-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

Add the Sour Cream Topping
In a small bowl, mix 1 cup sour cream with 1/4 cup sugar and 1 tsp vanilla extract. Spread this mixture evenly over the cooled cheesecake.

Chill and Serve
Refrigerate the cheesecake for at least 4 hours or overnight. Before serving, top with blueberry or cherry topping as desired.
