Grilled Portabella Mushroom Recipe
Giant Portabella marinated in balsamic vinaigrette then slow grilled for extra flavor. Served with sautéed fresh spinach, diced tomatoes and Dijon mayonnaise dipping sauce. (GF)

Marinate the Mushrooms
In a large bowl, combine the Portabella mushrooms and balsamic vinaigrette. Make sure the mushrooms are well coated. Let them marinate for at least 30 minutes.

Prepare the Spinach
In a large skillet, heat the olive oil over medium heat. Add the fresh spinach and sauté until wilted, about 3-4 minutes. Season with salt and pepper to taste.

Make the Dipping Sauce
In a small bowl, mix together the mayonnaise and Dijon mustard until well combined. Adjust the seasoning with salt and pepper if needed.

Serve
Plate the grilled Portabella mushrooms topped with sautéed spinach and diced tomatoes. Serve with the Dijon mayonnaise dipping sauce on the side.
