    Sauté Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring frequently, until the onions are caramelized and golden brown, about 25-30 minutes.

    Add Broth

    Once the onions are caramelized, add the beef broth and bring to a simmer. Season with salt and black pepper to taste. If desired, add fresh thyme for extra flavor.

    Prepare for Baking

    Preheat the oven to 350°F (175°C). Ladle the soup into oven-safe bowls. Top each bowl with a generous amount of homemade croutons.

    Cheese Topping

    Mix the Swiss, provolone, and parmesan cheese together. Sprinkle the cheese mixture over the croutons in each bowl.

    Melt the Cheese

    Place the bowls on a baking sheet and bake in the preheated oven until the cheese is bubbly and golden brown, about 10-15 minutes.
