Prepare the Dipping Sauce
In a small bowl, mix the Dijon mustard and mayonnaise together until well combined. Set aside.

Prepare the Breading
In a large bowl, combine the all-purpose flour, cornmeal, paprika, cayenne pepper, chili powder, salt, and black pepper. Mix well.

Marinate the Calamari
Place the calamari rings in a separate bowl and pour the buttermilk over them. Let them soak for about 30 minutes.

Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge each ring in the breading mixture, ensuring each is fully coated.

Fry the Calamari
Carefully place the breaded calamari rings in the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.
