    In a large saucepan, heat the milk over medium heat until it reaches about 190°F (88°C). Stir occasionally to prevent scorching.

    Once the milk is heated, remove it from the heat and stir in the vinegar or lemon juice. Let it sit for about 5-10 minutes, allowing the curds to form.

    Strain the Curds

    After the curds have formed, line a colander with cheesecloth and pour the curds and whey into it. Allow it to drain for about 10 minutes.

    Rinse the Curds

    Rinse the curds under cold water to remove excess whey and acidity. Gather the cheesecloth and gently squeeze out additional liquid.

    Season the Cottage Cheese

    Transfer the curds to a bowl, add salt, and mix gently. If desired, fold in heavy cream for a richer texture.
