Cheesecake Preparation

    Prepare the Crust

    Preheat the oven to 350°F (175°C). In a bowl, combine the graham cracker crumbs, 1 tablespoon of sugar, and melted butter. Mix until evenly combined. Press the mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Remove from oven and let it cool.

    Make the Filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup of sugar and mix until well combined. Add the vanilla extract and sour cream, mixing until smooth. Finally, add the eggs one at a time, mixing well after each addition. If using, fold in the chosen flavoring.

    Bake the Cheesecake

    Pour the cream cheese filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside with the door closed for an hour to cool gradually.

    Cool and Serve

    Remove the cheesecake from the oven and let it cool completely at room temperature. Refrigerate for at least 4 hours, or overnight. Before serving, remove the sides of the springform pan and garnish as desired.
