In a large bowl, combine minced garlic, chipotle peppers, cumin, oregano, salt, black pepper, and lime juice. Add the pork shoulder and diced pineapple, ensuring the meat is well coated in the marinade. Cover and refrigerate for at least 4 hours, preferably overnight.

Place a few slices of the grilled pork on each tortilla. Top with pickled red onion, chopped cilantro, crumbled cotija cheese, and a drizzle of salsa verde.
