    Prepare the Corned Beef

    In a pot, combine the corned beef and beer. Bring to a simmer and cook for about 1.5 hours or until tender.

    Make the Kimchi

    While the beef is cooking, chop collard greens and mix with kimchi. Set aside.

    Prepare the Special Sauce

    In a small bowl, mix together mayonnaise, Dijon mustard, Worcestershire sauce, salt, and pepper.

    Assemble the Sandwich

    Once the beef is tender, slice it thinly. Spread the special sauce on one side of each slice of rye bread. Layer with corned beef, collard green kimchi, and Swiss cheese.

    Grill the Sandwich

    Heat butter in a skillet over medium heat. Place the sandwiches in the skillet and grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
