Prepare the figs
Preheat the oven to 375°F (190°C). Cut a small slit in each fig to create an opening.

Stuff the figs
Using a small spoon or your fingers, stuff each fig with goat cheese until they are filled.

Wrap with bacon
Cut each slice of bacon in half and wrap one half around each stuffed fig. Secure the bacon with a toothpick if necessary.

Bake
Place the wrapped figs on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until the bacon is crispy.

Drizzle with balsamic
Remove the figs from the oven and drizzle with aged balsamic vinegar. Garnish with fresh rosemary if desired. Serve warm.
