Cheesecake Preparation

    Prepare the crust

    In a bowl, combine chocolate graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan to form an even crust. Bake at 350°F (175°C) for 10 minutes, then remove from the oven and let cool.

    Make the cheesecake filling

    In a large mixing bowl, beat the cream cheese until smooth. Add the Nutella, granulated sugar, and vanilla extract, mixing until well combined. Add the sour cream and beat until incorporated. Finally, add the eggs one at a time, mixing on low speed until just combined.

    Bake the cheesecake

    Pour the filling over the cooled crust in the springform pan. Bake at 325°F (160°C) for about 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

    Chill

    Remove the cheesecake from the oven, let it cool to room temperature, then refrigerate for at least 4 hours, or overnight.
