Preparation and Cooking

    Prepare the Potatoes

    Wash and peel the russet potatoes. Using a mandoline slicer or a sharp knife, slice the potatoes into thin rounds (about 1/8 inch thick).

    Soak the Potato Slices

    Place the sliced potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the potato slices and pat them dry with paper towels to remove as much moisture as possible.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potato Chips

    Carefully add a handful of potato slices into the hot oil, making sure not to overcrowd the pot. Fry until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

    Season the Chips

    While the chips are still warm, sprinkle with salt and the ranch dust mixture (garlic powder, onion powder, dried dill, and black pepper) to taste.
