Shrimp and Slaw

    Prepare the Shrimp

    In a bowl, combine flour, cornmeal, cajun seasoning, salt, and pepper. In another bowl, beat the eggs. Dip the shrimp first in the egg, then coat with the flour mixture.

    Fry the Shrimp

    Heat oil in a deep frying pan over medium-high heat. Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

    Make the Slaw

    In a large bowl, combine the shredded cabbage, julienned carrot, chopped cilantro, and sesame oil. Toss to mix well.

    Assemble the Po' Boy

    Slice the sub rolls in half. Layer with lettuce, fried shrimp, Vietnamese slaw, and drizzle with spicy yum-yum sauce. Serve immediately.
