Prepare the Burger Patty
In a bowl, combine the Michigan beef and Wagyu beef. Season with salt and black pepper. Form the meat into a patty.

Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.

Cook the Burger Patty
In the same skillet, add the burger patty. Cook for about 4-5 minutes on each side, or until it reaches desired doneness. During the last minute of cooking, place the slice of smoked gouda on top to melt.

Assemble the Burger
On the toasted pretzel bun, spread aioli on the bottom half. Place the burger patty with melted gouda, followed by crispy bacon and the fried egg. Top with the other half of the bun.

Serve immediately and enjoy your Varsity Burger!
