    Sauté the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are soft and caramelized (about 30-35 minutes).

    Add Garlic and Deglaze

    Stir in the minced garlic and cook for an additional 1-2 minutes. Then, add the white wine to deglaze the pot, scraping up any browned bits from the bottom.

    Combine Broth and Seasonings

    Add the beef broth, thyme, bay leaves, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 20-30 minutes.

    Prepare Croutons

    While the soup is simmering, prepare garlic croutons by toasting cubes of bread with olive oil and minced garlic until golden brown.

    Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls, top with croutons and shredded Gruyere cheese.
